Tacos are such a quick and easy dish to make, especially on those busy school nights. This shrimp taco recipe can be made in less than thirty minutes because it takes just a few minutes to sear the star of this dish which are the shrimp. The dressing for the slaw is also quick and easy and can even be made ahead of time. Another time saver for this dish is purchasing the coleslaw mix from the produce section in the grocery store instead of grating the cabbage and carrots by hand. The combination of slaw, red onions and freshly sliced mangos compliment the pan seared shrimp creating an amazing flavorful taste! Try this dish for your next Taco Tuesday night!
Serves 4
Pan Seared Shrimp
20 medium sized shrimp peeled and deveined
Drizzle of olive oil
1/4 teaspoon of Cayenne pepper
1/2 of teaspoon of Chili powder
1/2 teaspoon of Ground cumin
1 clove of garlic minced
1/4 teaspoon of salt
Squeeze of Lime
Flour tortillas
Drizzle olive oil on shrimp
Season with cayenne pepper, salt, cumin, chili powder and minced garlic and lime.
Heat olive oil in skillet and add shrimp to skillet and sear both sides
Mango, Lime and Cilantro Slaw
1/4 cup mayonnaise1 tablespoon sugar 2 tablespoons olive oil 2 tablespoons fresh lime juice 1/2 teaspoon kosher salt 4 cups shredded coleslaw mix (found it produce section) 1/4 cup chopped fresh cilantro 1 ripe mango, peeled and finely chopped
Whisk together first 5 ingredients in a large bowl. Add coleslaw, cilantro, and mango; toss well to coat.
Place slaw on tortilla and top with pan seared shrimp. Sprinkle diced red onion on top of taco and enjoy!
