Thai Inspired Ground Turkey Lettuce Wraps

These Thai Inspired Ground Turkey Lettuce Wraps are in my quick and easy meals rotation for those busy school nights. I found this recipe a few years ago but of course I put my own spin on it. It's a one pot dish that takes less than 20 minutes to make and not only will you save time getting dinner on the table but this go-to dish is healthy. Ingredients to Make Thai Inspired Lettuce Wraps

1 1/4 lb of ground turkey 1/4 cup chopped green onions (4 medium) 3 tablespoons chopped fresh cilantro 2 tablespoons fresh lime juice 2 tablespoons fish sauce 3 tablespoons creamy peanut butter 2 teaspoons of Sriracha sauce 1 teaspoon sugar 1/2 teaspoon crushed red pepper flakes

1 cup shredded carrots 1/3 cup chopped salted peanuts 12 Iceberg or Bibb lettuce leaves, rinsed, patted dry with paper towel


Directions to Make Thai Inspired Ground Turkey Lettuce Wraps

1. Season turkey meat to taste with salt, pepper and garlic powder.


2. Add olive oil to skillet and cook turkey over medium to high heat until cooked through 3. Stir in green onions, cilantro, lime juice, fish sauce, peanut butter, Sriracha sauce, sugar and red pepper flakes. Cook 3 to 4 minutes until hot. 4. Spoon turkey mixture into Lettuce cups and top with shredded carrots and chopped peanuts

**For an extra kick, top Lettuce Wraps with a few drops of Sriracha sauce**
