Ube Cream Stuffed French Toast

Keith Lee who is a famous Tik Tok food reviewer visited The Pepper Club Restaurant in Las Vegas and tried their Ube Cream Stiffed French Toast. Keith rated this dish a 9.7 out of 10. The Pepper Club is known for their brunch menu items and the Ube Cream Stuffed French Toast is one of the best selling dishes. Of course, when I saw Keith's review I had to recreate it at home because I no plans to travel to Vegas any time soon!


If you aren't familiar with ube, it is a root vegetable with a slightly nutty, vanilla taste and is popularly used in desserts in Filipino cuisine, often boiled and then mashed with condensed milk. I was unable to find it in my local grocery store, but I did find the ube flavoring on Amazon. I used the ube flavoring in my cream and to make homemade ube syrup. I truly enjoyed this dish! Ingredients to Make Ube Cream Stuffed French Toast


2 8oz tubs of whipped cream cheese

2 cups of powdered sugar (sifted)

1 teaspoon of vanilla extract

2 teaspoons of ube flavoring


For the French Toast Custard

4 eggs

1 cup of milk

1/2 cup of vanilla coffee creamer

1-2 tablespoons of cinnamon sugar

1 teaspoon of vanilla extract

2 loaves of Brioche Bread, sliced thick

Fresh strawberries

Fresh blackberries


Directions to Make Ube Cream Stuffed French Toast


In a medium bowl, add whipped cream cheese and powdered sugar. Mix until well combined.

Add vanilla extract and ube flavor and mix until well combined.


In a large bowl, add eggs, milk, coffee creamer, cinnamon sugar, and vanilla extract. Whisk until well combined.


Dip sliced brioche bread into custard and allow the bread to soak up a fair amount of custard.


In a skillet over medium high heat, add butter and then French toast to the skillet. Fry on both sides until golden brown. Set aside.


Make a deep slit into the top of the French toast and then pipe ube cream cheese inside and on top of the French toast.


Top with fresh berries and ube syrup.


Ingredients to Make Homemade Ube Syrup


1 ½ cups white sugar

¼ cup brown sugar

1 cup water

2-3 teaspoons of ube flavoring

½ teaspoon vanilla extract

2 tablespoons of cornstarch + 3 tablespoons of water (optional for a thicker syrup)


Directions to Make Homemade Ube Syrup


Mix white sugar, brown sugar, and water in a medium saucepan. Add cornstarch slurry if you want a thicker consistency for the syrup. Bring to a boil and simmer for about 5 minutes. Do not stir at this time. Remove from heat.


Stir in the ube flavoring and vanilla. Let it cool for at least 10 minutes before serving.
