Gingerbread Corn Muffins

It’s the 1st Day of my 12 Days of Christmas Recipes series! The first recipe of the series is these Gingerbread Corn Muffins. These were so good and would make a perfect addition to your table this holiday season! Below is the recipe.
1 bag of Miss Lena’s Cornbread mix
1/2 cup of dark brown sugar
2 teaspoons of ground ginger
1 teaspoon of ground cinnamon
1/8 teaspoon of ground cloves
1 teaspoon of vanilla extract
3 eggs
1/4 cup of molasses
1 cup of milk
1 stick of butter, melted
Preheat oven to 350 degrees.
In a large bowl, add cornbread mix, brown sugar, and spices and mix well.
In a separate bowl, add eggs, molasses, vanilla extract, and milk. Mix well until fully combined.
Add melted butter and mix again until fully incorporated.
Spray muffin tin with cooking spray.
Fill muffin tins with cornbread batter about 3/4 of the muffin cup.
Bake for 20 minutes or until a toothpick comes out clean from the center.
Top with melted butter and raw sugar.
