Peach Cobbler Ice Cream Sandwiches

Summer is HERE and these peach cobbler ice cream sandwiches need to be on your list of go to summer sweet treats. These are so easy to make and would be fun to make this summer with your children. Of course, I used Miss Lena’s Peach Preserves in my ice cream. I am very biased but I think the addition of my homemade peach preserves took these ice cream sandwiches to the next level. I also think using Cinnamon graham crackers helped bring this dessert together and truly taste like a peach cobbler. After making these ice cream sandwiches, I wrapped them individually in wax paper and stored them in freezer bags.


Ingredients Needed to Make Peach Cobbler Ice Cream Sandwiches


1 pint of heavy whipping cream

1 can of condensed milk

1 teaspoon of vanilla extract

1/2 teaspoons of cinnamon

1/4 teaspoon of nutmeg

3-4 tablespoons of Miss Lena’s peach preserves

3-4 packets of Lorna Doone Cookies, crushed

1 package of Cinnamon Graham crackers


Directions to Make Peach Cobbler Ice Cream Sandwiches


1. In a standing mixer, add heavy whipping cream. Mix until soft peaks form.

2. Add condensed milk, vanilla, cinnamon, nutmeg, peach preserves and crushed cookies.

3. Mix until well combined.

4. Pour into a parchment lined square pan. Cover with Saran Wrap and foil and freeze overnight.

5. Cut into squares and sandwich the ice cream square between cinnamon graham crackers.

6. Wrap in wax paper and store in freezer bags until ready to enjoy.
