Pastor David Briggs, Sr.’s Famous Corn Pudding


The next recipe in my I Remember Daddy series is Pastor David Briggs Sr.’s Corn Pudding. Below is what his daughter sent to me about her dad.


My name is Courtney “Coco” Briggs. My father, David J. Briggs was very special to me. He was a preacher, singer and lover of God’s people but he also loved to cook. One of his favorite side dishes that I so miss is his famous corn pudding.  We loss my father July 26, 2022. My father was my everything. He was very passionate about food and fellowship. He loved to bbq. He would pair this side dish with his famous bbq ribs. After losing my father, I thought that everything was over but shortly after he passed I began to honor his memory by cooking some of his favorite dishes. 


Here’s the recipe:

Ingredients

- 1 can of cream corn

- 2 cans of corn, drained

-3/4 box of jiffy 

- 2 eggs 

- 1 cup of sour cream 

- 1 cup of sugar

- tsp of vanilla 

- 1/2 stick of butter, melted

- 1/2 cup of milk 

(Salt and pepper to taste) 


1. Preheat oven for 350

2. Combine all ingredients in a bowl.

3. Mix until all ingredients are smooth with no lumps of sour cream or jiffy.

4. Place ingredients in a greased glass baking dish

5. Bake on 350 for 30 to 35 minutes or until golden brown. (I baked mine for almost an hour because my dish was smaller. Use a 9x13 to make this recipe)

6. Let rest for 10 minutes 

…and bam you have David J.  Briggs Sr.’s corn pudding.
