Fall is upon you need this pumpkin waffle recipe in your life! I made these for my daughter this morning for breakfast and she loved them! She’s so picky and normally only likes plain waffles but she devoured these. I used the pumpkin shaped waffle maker by Dash but you can use any waffle maker to make these.
Here’s the recipe!
1 1/2 c. all-purpose flour
2 tsp. baking powder
1 tsp. baking soda
1 tsp. ground cinnamon
1 tsp. ground nutmeg
1/4 tsp. ground ginger
1/2 tsp. kosher salt
2 large eggs
1/4 cup of packed light brown sugar
1 cup of canned pumpkin puree
1 1/2 cup whole buttermilk
6 tbsp. unsalted butter, melted and cooled
Whipped cream, optional
Mint Leaves, Optional
In a large bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, ginger, and salt.
In a medium-sized bowl, whisk together eggs, brown sugar, pumpkin puree, buttermilk, and melted butter until everything is well combined. Pour wet ingredients into flour mixture and stir until fully combined.
Heat up waffle maker according to manufacturer's instructions. Once waffle maker is hot, lightly spray with cooking spray and pour batter in, leaving a 1-inch border as batter will spread out.
Cook waffles until golden and crispy, about 3 to 5 minutes depending on waffle maker. Place cooked waffles onto a plate and repeat with remaining batter.
If using the Dash waffle maker, add whipped cream for the stem and a mint leaf for the pumpkin leaf.
