Easy Strawberry Cake

Ingredients for Strawberry Cake


1 box of white cake mix

1 3oz box of strawberry gelatin

4 eggs

1/2 cup of vegetable oil

1/2 cup of milk

1/2 cup of sugar

1/2 cup of fresh strawberries, chopped

1/3 cup of all purpose flour


Combine all ingredients in a mixing bowl and mix well for 2-3 minutes.


Pour into greased and floured cake pans. *If you are using 8 inch cake pans, the batter will fit into three. If you are using a 9 inch, the batter will only fit two. **Double the recipe if you want three full cake layers**


Bake cake on 350 degrees for 25-28 minutes. Stick a toothpick in the center of cake, it it comes out clean then the cake is done.

Fresh strawberry Purée

• 10-12 fresh strawberries

2 tablespoons of sugar


In a Nutribullet or blender, puree strawberries and sugar.

Ingredients Needed for Strawberry Buttercream


2 sticks of butter, softened at room temperature

• 1 teaspoon of vanilla extract

• 1/4 teaspoon of salt

• 3 1/2 cups of powdered sugar

• 1/2 cup of strawberry puree

• Several drops of red food coloring until desired color. I used 5-6.


Directions to Make Strawberry Buttercream

Place the butter in a large mixer bowl and beat on high until light and fluffy for 2-3 minutes.


Add the vanilla and salt, mix until just combined.


Slowly beat in the powdered sugar, 1 cup at a time making sure it is completely incorporated each time before adding the next cup.


Fold in the strawberry puree and food coloring and mix until well combined.

Using a butter knife or cake icing tool, spread the Icing on each cake layer. Add icing to the sides and top of the cake. Garnish with a fresh strawberry.
