4 pieces of fresh salmon
20 oz. container of fresh baby spinach
2 tbsp. butter
1/2 medium yellow onion, finely chopped
2 cloves garlic, minced
1/2 cup of milk
1/4 cup of heavy cream
4 oz of cream cheese
Salt to taste
Freshly ground black pepper to taste
1/4 cup of grated Parmesan cheese
Seafood seasoning from ByDeavenTaylor to taste for salmon and shrimp
3-4 pieces of shrimp per piece of salmon
Preheat oven to 400 degrees.
Rinse and pat dry the salmon fillets. Make a large slit in top of the salmon and season with Seafood seasoning to taste. Clean and devein shrimp and then season with Seafood seasoning and set aside.
In a large skillet over medium heat, melt butter. Add and onion and cook until soft, 5 minutes. Add garlic and cook until fragrant, 1 minute more. Add spinach and saute' until wilted. Remove from the skillet and drain the water from the spinach. Set aside.
In the same skillet, add milk, heavy cream, and cream cheese to skillet. Simmer until cream cheese is melted. Season with salt and pepper. Add spinach back to the skillet and then add Parmesan and stir to combine. Set aside to cool a bit.
Stuffed cooled creamed spinach into the salmon. Lay 3-4 pieces of seasoned shrimp on top of each piece of salmon.
In a cast iron skillet, heat olive oil over medium to high heat. Add salmon fillets to the cast iron skillet and sear the skin for about 7-8 mins. until the skin is crispy. Once the skin is crispy, place skillet in the oven. Cook until salmon is cooked through and shrimp are pink. Serve with mashed potatoes and enjoy!
