Sweet Potato Hushpuppies with Whipped Honey Cinnamon Butter

Fall is here and my favorite fall food is not Pumpkin but Sweet Potatoes! I love sweet potatoes because I grew up eating them all the time in various dishes. Candied yams are my favorite dish using sweet potatoes but I wanted to incorporate them in non traditional ways for my sweet potato series that will be running the entire month of October. The first recipe in my sweet potato series are these sweet potato hushpuppies. I grew up eating hushpuppies all the time especially with chopped BBQ or with some good fried fish!
In this series, I will also share a few recipes where you can incorporate Miss Lena's Sweet Potato Biscuit Mix. You don't have to use our mix just to make biscuits so I can't wait to share all of the recipes that I have created that incorporate our biscuit mix.
The first recipe that incorporates our mix is this sweet potato hushpuppy recipe! With the addition of 1/2 cup of our biscuit mix, a little salt, and some cornmeal, these sweet potato hushpuppies taste like a little piece of heaven. I paired them with some whipped honey cinnamon butter which is a copycat recipe of the Texas Roadhouse butter. I also made half of the hushpuppies savory but incorporating cubed ham and scallions. You can choose to make these plain and not additional ingredients. Below is the recipe. I hope you enjoy it as much as my family did!
Ingredients to Make Sweet Potato Hushpuppies
1 small sweet potato baked and mashed
1 1/4 cup of yellow cornmeal
1/2 cup of Miss Lena’s Sweet Potato Biscuit Mix
1/2 teaspoon of salt
2 Tablespoons of honey
1/2 cup buttermilk
1 egg
1/2 cup of cubed ham, optional
2 scallion, finely chopped, optional
Directions to Make Sweet Potato Hushpuppies
In a large bowl, add cornmeal and 1/2 cup of Miss Lena’s Sweet Potato Biscuit Mix, and salt and whisk well until fully combined.
In another bowl, add buttermilk, honey, mashed sweet potato and egg and whisk to combine.
Add wet ingredients to the dry ingredients and mix well.
Add half of the batter to another bowl and add cubed ham and chopped scallions. Mix to combine.
Heat oil to 350 degrees. Working in batches, drop a tablespoon of batter into the oil. Once the hushpuppies float to the top, remove from the oil and place onto a paper towel lined plate.
Ingredients to Make Whipped Honey Cinnamon Butter
1 stick of butter, softened at room temperature
1/4 cup of powdered sugar 1 tablespoon of honey
1/2 teaspoon of vanilla extract
1 1/2 teaspoon of cinnamon
1/8 teaspoon of salt
Directions to Make Whipped Honey Cinnamon Butter
In a small bowl, add all ingredients and mix well with a hand mixer until well combined and fluffy.
Serve at room temperature with sweet potato hushpuppies.
