Ingredients Needed to Make Southern Style Potato Salad
6-7 medium size potatoes, peeled and cubed
2 tsp kosher salt
5-6 hard-boiled eggs, peeled and chopped
1/2 cup of Mt. Olive Sweet Salad Cubes
1/2 cup of onion, finely minced
2 stalks of celery, finely chopped
1 1/2 cup of Duke's mayonnaise
1 tablespoon of apple cider vinegar
3-4 tablespoons of yellow mustard
1/2 tsp of celery salt
1/4 tsp of ground black pepper
Paprika for garnish
Directions to Make Southern Style Potato Salad
1. Boil cubed potatoes in a large pot of salted water until the potatoes are fork tender. Drain the potatoes in a colander.
2. While the potatoes are cooking, combine the mayonnaise, mustard, onion, celery, sweet salad cubes, apple cider vinegar, celery salt and pepper in a large bowl and mix well. Add the chopped boiled eggs and cooked potatoes and fold in.
3. Garnish with paprika and refrigerate until you are ready to serve.
