Creamy Garlic Shrimp Pasta


Need a quick and easy meal? This creamy garlic shrimp pasta recipe is a great dish to make on those busy week nights. This dish is so flavorful because of the garlic cream sauce and the fresh spinach and cherry tomatoes. If you have kids, they will love this dish. My two year old had two helpings and she is the pickiest toddler I know! Since the shrimp cooks so quickly, you can have this dish on the table in thirty minutes! 

Serves 4

2 tablespoons butter 6 cloves garlic, finely diced 1 pound of shrimp 1 small yellow onion, diced ½ cup white cooking wine

Handful of cherry tomatoes cut in half  1¾ cups of whole milk  Salt and pepper, to taste 3 handfuls of baby spinach leaves ⅔ cup Parmesan cheese  1 teaspoon cornstarch mixed with 1 tablespoons of water  1 teaspoon of dried Italian herbs 

Cooked angel hair pasta 

1. Heat a large skillet over medium-high heat. Melt the butter and add in the garlic and fry until tender:Add in the shrimp and cook two minutes on each side, until just cooked through. Remove from skillet and set aside. 

2. Add the onion in the butter remaining in the skillet. Pour in the white wine and allow to reduce slightly. Add the cherry tomatoes and cook for 1 to 2 minutes.

3. Reduce heat to low-medium heat, add the milk and bring to a gentle simmer, while stirring occasionally. Season with salt and pepper to taste.  4. Add in the spinach leaves and allow to wilt in the sauce, and add in the parmesan cheese. Allow sauce to simmer for a further minute until cheese melts through the sauce. 

5.  Add the cornstarch mixture to the pan, and continue to simmer while quickly stirring the mixture through until the sauce thickens. 6: Add shrimp back to the pan and toss wth angel hair pasta.
