Watermelon and Feta Salad with Pomegranate Balsamic Dressing


If you grew up in the South, then you know that watermelon and summertime go together like peanut butter and jelly! I don't know anyone in this world that loves watermelon more than my mother. During the summer, a cold watermelon could be her breakfast, lunch or dinner. Watermelon is incredibly healthy and packed with Vitamin A, B6 and Vitamin C. Two cups of watermelon is only 80 calories so it's a sweet treat that is friendly to your waistline. Remember, the best time to eat watermelon is between June and August so you have a few more weeks to enjoy it! Add this salad to your next BBQ and let me know how it turns out!  Serves 6 For the dressing

2 tablespoons of white wine vinegar 2 tablespoons of pomegranate balsamic vinegar (you can also use plain balsamic vinegar) 1/4 cup of olive oil Salt and pepper to taste For the salad 

6 cups of spinach 1 Red onion thinly sliced 1 couple handful of walnuts 2/3 cup of feta cheese crumbled 1 watermelon, cut in bite sized chunks 1.  In a small bowl, combine the vinegars, salt, pepper, and whisk until salt is dissolved. Slowly whisk in the olive oil, a little bit at a time. Taste and adjust seasonings as needed. 

2. In a large bowl, combine the melon, spinach, onion, and feta. Pour the dressing over the melon mixture and toss gently until everything is coated and evenly mixed.

3. To serve, garnish with walnuts and enjoy!
