Nothing Bundt Cake Apple Pie Cake- Copycat Recipe

Nothing Bundt Cakes had an Apple Pie Bundt Cake for a limited time, and baby, when I saw it, I already knew what time it was.
We’re making that $h!t at home!
Y’all know I love a good copycat recipe, especially when one of my favorite restaurants or bakeries decides to take something off the menu. Limited time might mean limited time at their bakery, but it doesn't have to mean limited time in my kitchen.
My Copycat Nothing Bundt Cakes Apple Pie Cake combines everything I love about fall baking: a moist, warmly spiced Bundt cake, tender apples, a gooey brown sugar apple filling, and that thick cream cheese frosting that makes a Nothing Bundt Cakes-style cake so good.
And the best part? Once you know how to make it yourself, you don't have to wait around hoping they bring the flavor back.
Why You'll Love This Apple Pie Bundt Cake
This recipe is the best of two desserts in one. You get the warm cinnamon-and-apple flavor of homemade apple pie combined with the soft, rich texture of a Bundt cake.
Using a spice cake mix gives us a head start, but we're doctoring it up with an extra egg and milk instead water. The result tastes anything but boxed. Then we take it over the top with a apple pie filling and my cream cheese frosting.
Copycat Nothing Bundt Cakes Apple Pie Cake Recipe
Makes: 10 Bundlets Oven: 350°F Bake Time: Approximately 25 minutes
For the Apple Spice Cake
1 box spice cake mix
4 large eggs
½ cup vegetable oil
1 cup of milk
1 teaspoon vanilla extract
1 teaspoon ground cinnamon
¼ teaspoon ground nutmeg
1/2 cup of grated apples
1 can of apple pie filling, cut into tiny pieces
For the Cream Cheese Frosting
8 ounces cream cheese, softened
½ cup unsalted butter, softened
3 cups powdered sugar
1 teaspoon vanilla extract
Apple Pie Crumble Topping
Ingredients
1 cup of all-purpose flour
1/3 cup of sugar
1/2 cup packed light brown sugar
6 tablespoons unsalted butter, melted
In a medium bowl, combine the flour, sugar, and brown sugar. Mix well until fully combinded. Add the melted butter and stir with a fork until the mixture forms moist, chunky crumbs. Don’t overmix, you want some larger pieces in there.
Once your Apple Pie Bundt Cake is frosted, sprinkle the crumble generously over the top and around the apple pie filling.
Sweet Tea Tip: Keep some of the pieces a little larger instead of breaking everything into fine crumbs. Those buttery brown sugar clusters will give the cake that bakery-style look and a little crunch with every bite.
How to Make the Apple Spice Bundt Cake
Preheat your oven to 350°F. Thoroughly grease and flour a 10–12 cup Bundt pan or the Nordic ware Mini Bundt Pan, making sure you get into all those grooves. There's nothing worse than making a beautiful Bundt cake and leaving half of it stuck in the pan!
In a large mixing bowl, combine the spice cake mix, eggs, vegetable oil, milk, and vanilla extract. Mix until everything is well combined, scraping down the sides of the bowl as necessary.
Fold in the grated apples.
Pour the batter evenly into your prepared Bundt pan or mini bundt pan.
Bake for approximately 25 minutes, or until a toothpick inserted into the cake comes out clean or with just a few moist crumbs.
Allow the cake to cool in the pan before carefully turning it out onto a cooling rack. Let it cool completely before adding the apple filling and frosting.
Make That Apple Pie Cake!
Once the Bundt cake has cooled completely, spoon the apple pie filling over the top, allowing some of those buttery, cinnamon-coated apples to settle into the center and cascade over the cake.
Now for the part that makes it look like it came straight out of that familiar white bakery box: the cream cheese frosting.
Beat the softened cream cheese and butter together until smooth and fluffy. Gradually add the powdered sugar, followed by the vanilla.
Transfer the frosting to a piping bag or piping tool and pipe thick lines of cream cheese frosting from the outside of the cake toward the center to create that signature Nothing Bundt Cakes-inspired look.
And that's it.
You've got Apple Pie Bundt Cake at home!
Can I Make This Apple Pie Bundt Cake Ahead of Time?
Absolutely. In fact, this is a great dessert to make the day before you're planning to serve it.
You can bake the Bundt cake and prepare the apple filling ahead of time. Once everything is completely cooled, assemble and frost the cake.
Because we're using cream cheese frosting, store the finished cake covered in the refrigerator. For the best flavor and texture, let it sit at room temperature for a little while before serving.
The Limited-Time Flavor Doesn't Have to Be Limited
One thing about me: when a restaurant or bakery gets rid of something I like, I'm going to figure out how to make my own version.
Nothing Bundt Cakes may have offered its Apple Pie Cake for a limited time, but now you can make an Apple Pie Bundt Cake right in your own kitchen whenever the craving hits.
That's why I always say:
When you cook at home, you know what you're eating.
And around here, if they stop selling it?
