If Popeyes Strawberry Biscuits and Bojangles BoBerry Biscuits exist, why can't Miss Lena's Peach Cobbler Biscuits? So, I decided to combine my favorite dessert and my favorite type of bread and make these peach cobbler biscuits. They turned out AH-MAZING! I used two peach cups that I normally put in my daughter's lunch box instead of using fresh peaches. I was concerned that a fresh peach wouldn't cook through in time. This recipe was a complete experiment that turned out so delicious.
I was so excited to make these biscuits in my new Miss Lena's biscuit bowl. You guys have asked me so many times where I got my biscuit bowl. The bowl that I have been using belonged to my late mother. I was able to replicate her bowl and I am excited to share them with you guys! The bowl will launch next month. Stay tuned for launch day!

Ingredients to Make Peach Cobbler Biscuits
1 bag of Miss Lena’s Buttermilk Biscuit Mix
1/4 cup of white sugar or cinnamon sugar
1 stick of frozen butter, grated
2 diced peach cups, drained and patted dry
1 cup of buttermilk
Egg wash
Graham crackers, crushed
Diced peaches, garnish
Directions to Make Miss Lena's Peach Cobbler Biscuits
Preheat oven to 450 degrees.
In a large bowl, add the biscuit, sugar and grated butter. Mix well until well combined.
Make a well in the biscuit mix and add peaches and buttermilk.
Mix well until a dough forms.
On a heavily floured surface, add biscuit dough and roll it out using a floured rolling pin. *Add extra flour to the dough if the dough seems too wet.*
Roll out the biscuit dough and then fold the dough several times. Roll out again and then fold the dough several times. *Keep adding flour if needed*
Roll out the dough one last time and use a biscuit cutter to cut out your biscuits.
Add your biscuits to a greased cast iron skillet.
Brush egg wash on the tops of each biscuit.
Bake for 12-15 minutes or until lightly browned.
While the biscuits are still warm, add peach vanilla glaze. Top with crushed graham crackers and a few pieces of diced peaches.
Peach Vanilla Glaze
1 cup powdered sugar, sifted
1/4 cup of freeze dried peaches, finely crushed
2-4 Tablespoons of milk
¼ teaspoon vanilla extract
In a small bowl, add all ingredients and whisk well until fully combined.
