Have you heard that THE Patti Labelle has new sweet potato thumbprint cookies at Walmart? I heard the news on social media the other day and I immediately went to my local Walmart to try them. I was so disappointed that my local Walmart didn't have a bakery section so I decided to make them myself. If you love sweet potato pie, then you must try this sweet potato cookie recipe. My family loved them plain but I loved them with the cinnamon cream cheese icing that I added on top. These cookies are definitely a 10 out of 10. If you try the recipe, make sure to tag me.
Ingredients to Make Sweet Potato Cookies
1 stick of salted butter, softened
⅔ cup light brown sugar
⅔ cup granulated white sugar
½ cup of mashed sweet potato
½ teaspoon of cinnamon
½ teaspoon of vanilla extract
1/2 teaspoon of nutmeg
2½ cups all-purpose flour
1 teaspoon of baking soda
½ teaspoon of salt
Directions to Make Sweet Potato Cookies
Preheat oven to 350°F.
In a large bowl, beat softened butter and sugars with a hand mixer until combined.
Add mashed sweet potato, cinnamon, nutmeg, and vanilla and beat until well incorporated.
In another bowl, whisk together flour, baking soda, and salt.
Add flour mixture into wet mixture in 2-3 batches, beating with a hand mixer to combine into a dough.
Using a two teaspoon measuring spoon or cookie scoop, roll into 1-inch balls. Press lightly with your thumb in the center of the cookie.
Transfer to baking sheets lined with parchment or a baking mat.
Bake 8-10 minutes, until starting to brown at the edges.
Cool 10 minutes before transferring to a wire rack.
Cinnamon Cream Cheese Frosting
1/2 stick of salted butter, slightly softened
4 oz. cream cheese, softened
1-2 teaspoons of vanilla extract
1 heaping teaspoon of cinnamon
2 cups of powdered sugar
Directions to Make Cream Cheese Frosting
Add softened Cream Cheese, softened butter, and Vanilla Extract to a mixing bowl.
Add 1-2 teaspoons of vanilla.
Mix the cream cheese, butter, and vanilla together on medium speed until they are fully incorporated (about 2 minutes.)
Add the powdered sugar and the cinnamon to the bowl.
Mix cream cheese/butter mixture with powdered sugar and cinnamon until the icing is light and fluffy.
Using a piping bag or decorating tool, pipe a dollop of icing onto the center of the cookie.
