Mini Lemon Bundt Cakes


Happy New Year, Spilling the Sweet Tea Family! If you love all things lemon, then this recipe is for you! I made these mini lemon Bundt cakes for dessert on Christmas Day and they turned out AMAZING! I honestly didn't plan on making a dessert because I was only making dinner for my immediate family of four. I knew I would probably be the only one to eat dessert but my sweet tooth kicked in and I decided to make something sweet.


I didn't want to go back to the store so I decided to use what I had in the house to make these lemon Bundt cakes. I used vanilla cake mix because that's what I had but a lemon box cake would be great too. I like adding a bit of liqueur to my desserts so I added some Limoncello liqueur to my cake batter. You can skip this step if you don't have it or don't want to add it.

I have the Nordicware Mini Bundt Cake pan and that's what I used to make these mini Bundt cakes. I love this pan because it is high quality and always gives a perfect release. Below is my review on the pan which is on the Amazon platform.



Ingredients Needed to Make Mini Lemon Bundt Cakes


1 box of Vanilla Cake Mix

3 oz box of vanilla pudding mix

1/3 cup of fresh lemon juice

2/3 cup of water

4 eggs

1/2 cup of vegetable oil

1 teaspoon of lemon extract

2 teaspoons of lemon zest

1 tablespoon of Limoncello liqueur, optional


For the glaze


2 cups powdered sugar

1/4 cup of lemon juice

1/2 teaspoon of vanilla extract


Directions to Make Mini Lemon Bundt Cakes

  1. Preheat oven to 350 degrees.

  2. In a standing mixer, add cake mix, pudding mix, water, eggs, lemon juice, vegetable oil, lemon extract, and lemon zest and beat on medium speed for 2-3 minutes.

  3. Coat Mini Bundt Pan with cooking spray.

  4. Add batter to each mini Bundt mold and bake for 15-17mins or until a toothpick come out clean.

  5. Allow cakes to cook in the Bundt pan for 5-7 mins.

  6. Using a serving tray, flip the cakes out of the pan and allow to completely cool before adding the icing.

  7. Drizzle icing on top and add dehydrated lemon slice to garnish.


How to Make Dehydrated Lemon Slices


2 lemons, thinly sliced

  1. Slice two lemons thinly and pat dry on both sides. Add parchment paper to air fryer basket.

  2. Add lemon slices to air fryer and air fry on180 degrees for up to 90 minutes flipping every 30 minutes.
