Mexican Pizza - Better than Taco Bell

It has been years since I last ate Taco Bell but when did the Mexican Pizza was my favorite. I rarely eat fast food these days but that doesn't mean I can’t recreate one of my favorite fast food cheat meals. I have nothing against fast food but I had a mom who always said, “If you eat at home, you know what you are eating” which is why I love to cook. This recipe is really easy and simple to make and it includes my homemade Taco seasoning recipe. I love Mexican food but I hate those taco seasoning packets that you buy in the grocery store. It isn't hard to make your seasoning. All you need is the right combination of key spices and for taco seasoning those spices are chili powder, cumin and cayenne pepper. I normally make a big batch and store it in a seasoning container that I purchased off Amazon. If you want to switch up your meal for Taco Tuesday, give this recipe a try. Here's how to make it.


Homemade Taco Seasoning for Mexican Pizza

2 tablespoons of chili powder

2 teaspoon of ground cumin

2 teaspoon of garlic powder

2 teaspoon of paprika

1 teaspoon of dried oregano

1 teaspoon of salt

1/2 teaspoon of black pepper

1/4 teaspoon of cayenne pepper

1/2 teaspoon of crushed red pepper flakes


Whisk seasoning in small bowl and set aside.


Recipe for Mexican Pizza


1 bag of flour tortillas

1lb of ground turkey or ground beef

1 tablespoon of minced garlic

1/2 cup of finely diced onions

1 can of refried beans

1 can of enchilada sauce

1 bag of Mexican cheese


Suggested toppings

Diced tomatoes

1 can of sliced black olives

3 scallions

Sour cream

  1. Preheat oven to 375 degrees.

  2. In a skillet, saute onion and garlic until translucent.

  3. Brown ground turkey or beef in the skillet. Drain the excess grease if using ground beef.

  4. Add 2 tablespoons of homemade taco seasoning and simmer for 5 mins.

  5. Fry tortillas in a separate skillet or bake in the oven for a healthier option until crispy.

  6. In a small sauce pan, heat up refried beans- add a little of salt to your beans.

  7. To build your Mexican pizza, place one tortilla on a baking sheet and spoon enchilada sauce on top.

  8. Spoon a bit of refried beans on top of the tortilla.

  9. Add the ground turkey or ground beef.

  10. Top with another crispy tortilla and spoon more enchilada sauce on top,

  11. Top with a handful of Mexican pizza on top and top with sliced olives.

  12. Bake in the oven until the cheese has melted.

  13. Top with diced tomatoes, scallions and a dollop of sour cream.
