Ingredients for Blackberry Compote
3 cups fresh or frozen blackberries
1 lemon, juiced
Lemon zest
1/4 cup of white sugar
1/4 cup of brown sugar
2 cups water
1 teaspoon of vanilla extract
1/4 teaspoon of nutmeg
1/4 teaspoon of cinnamon
1/8 teaspoon of ginger
2 tablespoons of butter
Ingredients for Homemade Dumplings
1 bag of Miss Lena’s biscuit mix
2 tablespoons of sugar
1/2 teaspoon of cinnamon
1/4 teaspoon of nutmeg
1/2 cup of Crisco
3/4 cup milk (add more if your dough is too dry)
Directions to Make Blackberry Dumplings
1. Combine blackberries, lemon zest, lemon juice, vanilla extract, white and brown sugar, cinnamon, nutmeg, and water in a large saucepan on top of the stove. Bring to a boil, then turn down to medium boil and cover the pot. Add butter once the mixture starts to boil.
2. In a large bowl, add Miss Lena’s biscuit mix, sugar, cinnamon and nutmeg and mix until combined.
3. Using a fork, mix in Crisco until mixture resembles crumbles. Add milk and mix until the mixture forms a dough. Your dough should be where you can flour your hands and pull off pieces and roll into balls about the size of a walnut.
4. Once the blackberry mixture is boiling, add your dumplings to the pot.
5. Cook 7-9 minutes until dumplings are cooked.
6. Ladle into a bowl and serve with vanilla ice cream and top with granola.
