Popeyes Strawberry Biscuits Copycat Recipe

Popeye's just added a strawberry biscuit to their menu and I am spilling the tea on my version. This recipe is very similar to how I make my version of Bojangle's Bo Berry biscuits. These biscuits turned out ABSOLUTELY AMAZING! They were buttery, sweet and so fluffy! I used Miss Lena's Buttermilk biscuit mix to make this recipe which you can find on my website or Amazon.com The full recipe is below.

For the Strawberry Biscuits

1 bag of Miss Lena's Buttermilk Biscuit Mix

2 tablespoons of sugar

1 stick of frozen butter, grated

4-6 fresh strawberries, finely diced

1 cup of whole milk plus 1 tablespoon of white vinegar or Buttermilk

Egg Wash

Melted Butter

For the glaze

2 ½ cups powdered sugar

3 tablespoons plus 1 tsp. milk

1 teaspoon vanilla extract

Whisk together powdered sugar, milk, and vanilla until smooth.

Directions to Make Strawberry Biscuits

  1. In a large bowl, add your Miss Lena's Buttermilk Biscuit Mix. Add sugar and whisk until combined.

  2. Add grated butter and mix until combined.

  3. Add fresh strawberries and mix well.

  4. Make a well in the center of the bowl and add your buttermilk.

  5. Working from the sides to the center, mix the buttermilk into the biscuit mix until it forms a dough.

  6. On a floured surface, roll out the dough and then fold it several times. Roll it out again and repeat the folding process two more times.

  7. Roll out the dough for a final time and use a biscuit cutter to cut biscuit rounds.

  8. Add to a cast iron skillet and brush with an egg wash.

  9. Bake on 450 degrees for 15 minutes or until golden brown.

  10. Brush with melted butter and drizzle glaze on top.

Serve while hot.
