Bacon Maple Glazed Sweet Potato Donuts

Today is the last day of my sweet potato series! I have shared recipes for sweet potato hushpuppies, mini sweet potato soufflé pies, sweet potato butter, sweet potato funnel cakes and lastly sweet potato donuts. These sweet potato donuts were so good! I baked them instead of frying them and found them to be the perfect addition to my morning cup of coffee. Out of all of the recipes that I shared for this series, this one is my favorite. If you love the combination of salty and sweet, you must give this recipe a try! Ingredients Needed to Make Sweet Potato Donuts

1 bag of Miss Lena’s Sweet Potato Biscuit Mix

1 teaspoon of cinnamon

1/2 teaspoon of nutmeg

1/2 teaspoon of salt

1/2 cup of vegetable oil

1/4 cup of milk

2 large eggs

1 cup of mashed sweet potatoes

1/2 cup of brown sugar

1 teaspoon of vanilla extract

Ingredients for the Maple Glaze

2 tablespoons of Butter

1/3 cup of Maple syrup

1 cup of powdered sugar, sifted

Garnish- Crumbled bacon

Directions to Make Sweet Potato Donuts

Grease 2 donut pans.

In a large bowl, add Miss Lena’s sweet potato biscuit mix and add cinnamon, nutmeg and salt and whisk well until fully combined.

In a medium bowl, whisk together the vegetable oil, brown sugar, eggs, mashed sweet potatoes, milk, and vanilla extract.

Add the wet ingredients to the dry ingredients and stir together until just combined.

Using a gallon size Ziploc bag, add the batter to the bag. Cut the corner of the bag to create a piping bag. Spray donut pan with cooking spray. Pipe the batter into greased donut molds.

Bake at 350F for15 minutes or until the tops spring back when lightly pressed. Remove from the mold and place on cooling rack.  Once the donuts are cooled, dipped into maple glaze and sprinkled with chopped bacon.

Directions to Make Maple Glaze

In a small saucepan over low heat, melt the butter and maple syrup together, whisking occasionally. Once the butter has melted, remove from heat and whisk in the sifted confectioners’ sugar.
