Kid Friendly Spaghetti and Veggie Meatballs

If you're a mom, you can relate that it can be impossible at times to get your child to eat their veggies! Before my daughter turned two, she would eat vegetables all the time. She loved spinach, string beans, collards and the list goes on and on. Once those terrible twos set in, she refused to eat her veggies! Well, I had to get a bit sneaky and hide vegetables in her favorite foods! My daughter loves spaghetti, doesn't like when I make it with meat sauce, but will tear up a meatball. Check out my  recipe for spaghetti and veggie meatballs and let me know if you were able to fool your little one! 

Serves 4

1 1/4 pounds ground turkey 

1/3 cup of zucchini 

1/3 cup of carrot 
 
2 teaspoons Worcestershire sauce
 
1 egg, beaten
 
1/2 cup Italian bread crumbs,
 
1/4 cup grated Parmesan cheese 

2 cloves garlic, chopped
 
Salt and pepper to taste 


 
Sauce:
 
2 tablespoons extra-virgin olive oil, 
 
1/2 teaspoon crushed red pepper flakes
 
4 cloves garlic, crushed or chopped
 
1 small onion, grated or finely chopped 
 
1 cup of beef stock 
 
1 (28-ounce) of crushed tomatoes 

1/2 tablespoon of Italian seasoning 
 

 

 
1. Preheat oven to 425 degrees F.
 
2. In a large bowl, mix ground turkey, veggies, Worcestershire, egg, bread crumbs, cheese, garlic, salt and pepper. 

3. Roll meat into 1 1/2 inch medium-sized meatballs and place on cookie sheet greased with extra-virgin olive oil. Bake balls 10 to 12 minutes.  

4. Heat a deep skillet or medium pot over moderate heat. Add oil, crushed pepper, garlic and finely chopped onion. Saute 5 to 7 minutes, until onion is tender. 

5. Add beef stock, crushed tomatoes, and Italian seasoning. Bring to a simmer and cook for about 10 minutes.

6. Add cooked meat/veggie balls in the sauce and simmer for 10 mins
 
7. Serve over cooked pasta and top with grated parmsean.
